I’m going to be honest with you. I don’t know what I’d do without tea. I have a liiiiitle obsession, so when John Lewis got in touch and asked me to try some of their products to create my version of afternoon tea, I was game.
Now I don’t know about you, but afternoon tea is all about the sweet food for me! You can keep your cucumber sandwiches, send the scones my way. I wanted to shake things up a little and try something new, so challenged myself to make some earl grey shortbread biscuits plus a couple of other afternoon tea themed treats! Read on to catch the recipe and see what afternoon tea treats you can get from John Lewis!
Just as side note before the shortbread recipe, can we just take a moment to admire our new tablecloth? It’s PVC coated so perfect when little O is over I can easily wipe up mess. It’s pretty cheap, at only £15 per metre here, and the bees are the perfect little nod to our new Manchester life. Anway, onto the sweet stuff…
Earl Grey shortbread I hear you cry?! My mum was quite upset that I’d ‘messed with’ the shortbread (!) but it’s actually a nice little alternative. The lemon really lifts the shortbread, and the earl grey flavouring adds a bit of earthiness to it. If you fancy trying, here’s what you need:
300g plain flour
1 tbsp (2 teabags) earl grey tea leaves
1/2 tsp salt
150g caster sugar
1tbsp fresh lemon juice
zest of 1 lemon
175g butter (cubed & chilled)
- Put the flour, sugar and tea in a large bowl and mix so that the tea leaves are evenly distributed
- Add the butter and lemon zest and rub together with your hands, the mixture should start to develop a bread crumb like texture.
- Add in the lemon juice and continue rubbing the butter in. At this point you should be able to bring the mixture together in your hands to form a crumbly dough.
- Once you’ve brought all of the mixture together, roll the dough into a sausage shape about 5-7cm wide, depending on how big you want your biscuits, wrap in cling film and leave in the fridge for 30 mins.
- Preheat the oven to 190°C
- After the dough has chilled, roll out and cut carefully with a cookie cutter. These rose gold ones from John Lewis are my absolute fave – I just used the circle ones for these but I can’t wait to get the gingerbread man out in a few weeks!
- Place onto a lined baking tray and bake in the oven for 10-12 mins.
- Once baked allow to sit for 5 mins before transferring to a cooling rack to cool completely.
When is afternoon tea better than tea? When it’s gin! I’m a massive fan of flavoured gin, and this Edinburgh Rhubarb and Ginger gin is incredible! The Rhubarb flavour is so well infused that it holds up well in cake mixtures, like my Rhubarb and Gin Cupcakes – recipe is here. These are the perfect boozy addition to any afternoon tea table. Serve in highball glasses with elderflower tonic and these cute straws!
Scones are a gift sent from heaven. I’m normally a traditional gal when it comes down to scones, but these fudge scones are a serious treat. Buttery, sweet and very easily made!
